What this family name actually tells you

Food gums and stabilisers help thicken liquids, form gels, suspend particles or keep texture consistent. The range includes seaweed-derived alginates and agar, seed gums such as guar and locust bean gum, tree exudates such as acacia, and fermentation products such as xanthan and gellan.

“Gum” is everyday texture language, not one chemical family or one health verdict. Carrageenan, xanthan, guar and gellan are different substances with different sources, behaviour and evidence. Read the exact name rather than treating E400–E418 as interchangeable.

Similar numbers do not mean identical ingredients

Alginates, agar and carrageenan are associated with seaweed; guar and locust bean gums come from seeds; acacia gum comes from tree exudate; xanthan and gellan are made using microorganisms. Manufacturing aids and cross-contact still require product-specific checks.

Thickener, gelling agent and stabiliser are different jobs

A thickener increases viscosity, a gelling agent forms a gel and a stabiliser helps maintain the physical state of a food. One additive can be useful in more than one way, so the functional class on the pack adds information beyond the E-number.

Texture does not equal ultra-processing by itself

NOVA-style processing classification considers the formulation and purpose of ingredients across the whole food. Finding one gum can be relevant context, but it is not a complete classification method and does not measure nutritional quality.
